I don't think it's the chewing that gets them. It's 4 and a half pounds of meat plus a pound of sides. Humans are not built to consume over 5 pounds of food in an hour.Three 1.5 lb porterhouses might be easier than this giant chunk of top sirloin. More tender, less chewing.
You have to eat the whole meal to win. Including the baked potato and salad. There is a healthy debate on which order to do this all in.

Bro, if I ever wanna learn how to sling beef like a pro, I am gonna for teutelage under one of their guys. I've noticed they can tell temp by how the beef falls off the tong. Ever wanted to put out a hot spot flame? These guys sling a couple ice cubes and poof, gone. Then back to slingin' that seasoning. I'm curious how many they cook in a shift.
