Thanksgiving Menu

When my wife prepares like we did a couple times when we were still in San Diego, she throws down with dry brine, special recipe for stuffing, a great recipe for braised red cabbage (basically candied), the latter of which which we are making this year and bringing down to NJ as we hang out with my German/Irish family for what will be an otherwise pretty basic thanksgiving. For me, the only real great part about the food at Thanksgiving in NJ is pies from local farms for dessert
 
Last year i smoked a Turkey. I served it to a Mexico friend. I dont think she loved it. This year she wants a normal Turkey.

She has never eaten pumpkin pie. Ill make some of that. She loves squash in general. So i assume it will go well.
 
Ahhh yes, Cocktails.... plenty of Quiver Spiced Honey Krupnikas & their Quince Fruit Spirit to make:

I am in charge of the turkey only. Wet brine, Cajun inspired, then smoked.
 
My sister is cooking so I don't know what she is making but I'm trying to talk her into hitting up Kowloon instead.
 
As the resident vegan on the BY, I will give you my reviews of this year's pea protein fake turkey roast.

Dry-brined and spatchcocked turkey with an artery-clogging amount of compound butter shoved under the skin before roasting. I have yet to find a better way.
what is "spatchcocking"? Asking for a friend.
 
Chicken marsala with homemade pasta, homemade breadsticks, Caesar salad, and homemade Stracciatella gelato for dessert. Wife and I are not turkey fans

Cut the backbone out and cook it flat. You give up the traditional presentation but it cooks way quicker and more evenly. Taste-wise it is just better.
 
First ever Jon-traditional Thanksgiving:

  • Smoked brisket
  • Smoked pork shoulder
  • Creamy coleslaw
  • BBQ baked beans
  • Skillet cornbread
  • Maple glazed carrots (the one holdover at my daughter’s insistence).
  • Smoked brisket Mac & cheese
  • Blueberry. Cherry and sweet potato pies with homemade French vanilla frozen custard
 
Going to my wife's cousin's house in Yarmouth so I honestly don't know aside from my wife's homemade cranberry sauce and whatever beers I bring.

Maybe I'll smoke some turkey or a roaster chicken for the leftover experience.
 
Friendsgiving in Fla....Apps at our house..then dinner out...waaaaay easier than cooking

Love making the spatchcock chicken. It comes out great, great on a charcoal grill also with some smoking wood tossed on the coals for additional flavor. You just have to make sure to save the backbone if you are going to make stock out of the carcass. There's a lot of flavor in there.
 
Think I'm making lasagna. Turkey sucks.
My kids aren't fans of turkey, so my wife is making prime rib. Though it is delicious, to me it is a little anti-climatic in that it just doesn't feel like Thanksgiving. Personally I blame August West as the founder of the anti-Turkey movement. My wife will cook up a turkey breast with all the traditional sides for the two of us probably a week or so after Thanksgiving.

I think she is going with pecan pie, apple pie and a cinnamon Bundt cake for desserts.
