Thanksgiving Menu

They are adult children at this point so I guess they actually get to have a say, but I agree. My wife's thought is, "well I just want to make sure everyone enjoys the meal." If I pressed her on it, she'd probably separately make a turkey for me. She actually offered to do that the first year this came up.

She is an excellent cook, but, truth be told, turkey probably isn't her best meal.
Just deep fry a small bird yourself. Waaaay easier and faster than oven cooked. Plus y can hang outside having a cocktail with the kids while it cooks

I go to my sisters and I bring my mom's stuffing but I make an entire dinner here on Wednesday for leftovers and weekend guests.

Roast turkey - Dry brined for 2 days
Mom's stuffing
Mashed potatoes with roasted garlic
Maple glazed acorn squash
Broccoli au gratin
Cranberry - the can shaped one, obviously....

I've never tried that. I probably should.

Spatchcocked turkey
Salmon with a honey lemon glaze for the vegetarian freaks
Mashed potatoes w/ cream cheese and an ungodly amount of butters/salt/pepper
Apple pie. My secret is freezing everything I possible can and pre-roasting the apples.

Others in the family are bringing acorn squash, sweet potatoes, pecan pie, cake for a birthday, green bean casserole (ew), etc. My aunt always makes some pineapple and cream jello thing which is just disgusting. I take a scoop and pretend to take a bite to be polite.

Respectfully, Apple pie with cheddar cheese is a crime against humanity.

We tend to butt heads on here, but I fully endorse this view. That shows how f%$^d up of an idea that is.

A friend did a test a few years back when we had Thanksgiving at their house. He deep fried one Turkey and Smoked the other. Both were good. The deep fried turkey was more juicy, but the smoked had better overall flavor. We declared it a tie.

But there is also this.

I don’t think salmon is going to work for a vegetarian. Pescatarians would approve though.

Apple slices and cheddar have long been considered complementary. It works well together. Apple and cheddar grilled cheese is definitely a thing. Whether that is true for pie or not, I can't say.

Really - our friend used to always deep fry a small bird at the tailgate before the last game at the Rent. 45 minutes. Easy peasy.

Thanksgiving doubles up as birthday in my family this year, so the birthday menu takes precedence.

Flank steaks with chimichurri
Mashed Potatoes with whipped feta for a topping
Roasted Potatoes
Grilled Asparagus with parmesan

Creme Brulee for dessert

Add a couple thin slices of apple and a little honey on a grilled cheese sandwich.

Appetizer - Lagunitas Shugga
Main Course - Blanton's Single Barrel
Dessert - Hennessy XO

(Frau is in Italy, so I'm using the opportunity.)

I cook for the fam and a homeless shelter so this week is my superbowl.

I always wet brine my birds for 1 hr per lb in brine with spiced apple cider, cinnamon, nutmeg, and apple slices.

I do a string bean casserole with dry sautéing the beans like a szechuan dish and combine with mushrooms, a mushroom soup I make and a little parmesan on top.

Cranberry sauce from scratch with cold pressed Oj and honey.

Amouse bouche this year is nachos with house smoked spare rib meat, home grown habaneros.

Basically I am a foodie and love this holiday so many more dishes and Lions football on at 1pm (so those upset at our ankle injuries - their entire defense was out for their playoff run last year).

Vanilla ice cream goes a lot better with apple pie but cheddar could maybe be okay. If I'm doing the cheese and apple combo I befer brie.

Thanksgiving day we will be at friends.

We'll cook our own turkey on Friday. 13 pound bird Mashed potatoes, stuffing, green bean casserole, gravy and dinner rolls.

Dessert will be apple pie adn blueberry pie.

Adult beverage: bourbon for me and either voda or chardoney for the wife.

Saturday breakfast will be leftovers!!!!!!

For those deep frying a bird, cooking time is 3 minutes per pound. Did a deep fried bird for 12 years when we lived in CT. Usually had a 25+ bird in the oven along with the deep fried one. 14 to 16 relatives for the meal.

It’s so easy. Did it a few years ago. Just need to be sure turkey is totally defrosted and dry. The kit usually comes with a seasoning injector. Just hook up to a propane tank. Takes like 45 min.

Obviously do it outside away from the house

I’m going turkey breast, not full bird. Turkey is ok and the tradition for Thanksgiving is awesome but the breast alone is much tastier. Then we’ll have lots of good sides like potatoes, Brussels, beets and green beans.

I’m most excited to nap, frankly.

have the fire department on speed dial.
Why? The oil temp should be under 400F so peanut oil is below its flash point. Won’t ignite if below flash point. Might smoke a lot though.

If y leave room for the bird pot wont overflow.

It really is quite easy as long as bird is thawed and dry

Yeah I love apples and cheddar. I ate it yesterday.

On a pie? Disgusting.

A brie cheese, apple, honey and walnut panini is a great sandwich. And of course, a panini with cheese in it, is just a fancy grilled cheese.
