Cut the backbone out and cook it flat. You give up the traditional presentation but it cooks way quicker and more evenly. Taste-wise it is just better.

Love making the spatchcock chicken. It comes out great, great on a charcoal grill also with some smoking wood tossed on the coals for additional flavor. You just have to make sure to save the backbone if you are going to make stock out of the carcass. There's a lot of flavor in there.View attachment 113748

My kids aren't fans of turkey, so my wife is making prime rib. Though it is delicious, to me it is a little anti-climatic in that it just doesn't feel like Thanksgiving. Personally I blame August West as the founder of the anti-Turkey movement. My wife will cook up a turkey breast with all the traditional sides for the two of us probably a week or so after Thanksgiving.Think I'm making lasagna. Turkey sucks.

They are adult children at this point so I guess they actually get to have a say, but I agree. My wife's thought is, "well I just want to make sure everyone enjoys the meal." If I pressed her on it, she'd probably separately make a turkey for me.
