A DE (who is really a pass rushing OLB) is far from a pressing need for this team.
The defense needs at least one CB (Banks has talent, was a head case for a while, then after returning from witness protection appeared to have his head screwed on straight) and I would love someone close to Dexter Lawrence's profile lining up next to him.
Shy of trading people away we have no need to draft an edge rusher, WR, RB or safety earlier than round four and I don't believe we have a pressing need at inside LB.
Thibodeaux was quietly better this year, but I agree with the overall premise of not passing on Carter because of it. Giants really put themselves in this predicament by screwing up the tank job in the Jayden Daniels draft. There's pressure for Daboll and Schoen to win in year 4, realistically need to rebuild, then you can't sell that to your fans and the veterans on your team by starting a rookie qb who may be a bust to begin with. Could still draft a qb in rd 2 and have him sit for a year as you should with most rookies.That would be a horrible decision. But when the alternative is trading up to #1 I don't love any option

I don't trust the Giants to be buyers at the same the rebuilding looks like the 50 year rebuilding plan lol.

My hesitation with a QB round 2 is he'll sit for a year as he should, the Giants will suck again, and Daboll and Schoen are fired as they should be. Now do you force your next coach/GM to work with a QB they didn't take? Probably not. So I'm starting to feel like a round 2 QB ends up as a wasted pick
Right now I'd say my top choice is a trade up to 1 for Cam Ward assuming they don't need to move next year's 1st in the deal and then sign someone like Justin Fields or Jameis Winston.
