He came in with a shirt over it and stripped down to mitigate the eventual meat sweats. Also, if I saw correctly, it looked like he took his personal knife and stabbed the initial steak. (did anyone else see this?)

There is a kitchen myth that probing a steak lets all its juices out. In fact, overcooking a steak by even 5°F causes far more juice loss.

If you have a say on doneness, this pretty much says to order it as well done as you can stomach... every bit above medium loses that much more in the way of juices and every ounce counts. Medium well could give you a slight edge via moisture loss... hack it up as soon as you get it, probably lose more to your plate too.
