IMO, Rikie Lee Jones was very underrated:

Olivia Newton John was a singer whose talent kind of got lost with the popularity of Grease and her foray into disco pop. One of my favorite recordings was her cover of George Harrison's "If Not for You."

A Spanish Celtic band singing a marvelous Irish folk tune. I believe the lead singer is named Maria Fernandez.
