I got them confused with SJC, which is also a elite team with Azzi. I think Paige's team is a heavy favorite to win states.

Saylor Poffenbarger had 25 points, 13 rebounds, 4 assists, and 4 blocks on Sunday to lead Middletown to the regional title game.

I recall it being the same last season. I was on vacation, so the Notre Dame game was the final night of my vacation and the Hamilton Heights - Central Valley (?) game was on the next night.

You are not remembering correctly. Although Jensen is AAU teammates with Paige there has been no UCONN linkage to Jensen . You might have been confused by a article about her and paige. From the Article:
"Although she (Jensen) isn’t weighing the Notre Dame, UCONN, Maryland type of offers on Bueckers’ table, Jensen has no shortage of difficult choices in her future, as well. Lauren has more than 15 quality D1 opportunities, including multiple Power 5 suitors."

UConn apparently watched Bueckers' AAU teammate Lauren Jensen (2020) on Tuesday. Jensen is currently not ranked in any of the outlets that I can tell, but she's been a terrific high school and AAU player. Her reputation is that of a strong shooter with a high IQ and good work ethic. Some BIG 10 schools have shown the most interest so far including Maryland who was out to see her the same night as well.
