I want to get a smoker but have no idea what to get- worried about cost and learning curve. Are they complicated? Budget would be 500-1000.
Pit Boss at Lowes has an excellent entry level smoker. I have this one, it does a great job and it is very easy to use.

As you get ready to smoke your first brisket or pork shoulder, remember you're not cooking a quality piece of meat. You're not cooking a filet mignon. You're taking a tough piece of meat and slowly rendering the fat in it while tenderizing the meat. Low and slow wins the day.
 
I've posted about this method before. It’s super simple and always results in a moist, even cooked bird. About the time when you would foil tent, add a layer of bacon instead.
