Three other recruits left in ESPN top 100:

Tayasha Harris - 5'10" PG - Indiana
Mi'Cole Cayton 5'9" G - CA
Arella Guirantes 6'0" G - IMG Florida
 
Ionescu and Harris are the 'prizes' in terms of rankings out there.
There are a bunch of others beyond the top 100 who have yet to sign - TN and Duke are both getting lower ranked posts (as far as 'commitment' reports go) and of course there are varying levels of interest in JuCo stars who are likely to sign in the next couple of days.
 
From the JUCO ranks there is Cheridene Green 6'4" Post from England.
From the international ranks there is Eleanor Jones a 6'4" post from England also and Franesca Pan a 6'1" SG/wing from Italy.

Is Ms. Green, or any other JUCO big for that matter, a "UConn level" recruit? Do you think the staff may pursue this route to address the lack of size heading into next season?

Green could be a UCONN contributor IMO. Comparable players from the JUCO ranks in the last two year are Bulgak at FSU an Evelyn Akhator at Kentucky. Both (Akhator & Bulgak) were former JUCO college players of the year and Green has put up better numbers that both. Bulgak will be a top 10 WNBA pick in a few days. I doubt the staff will pursue a JUCO player this late in the game. UCONN runs complex offenses and defenses and that takes time to learn. JUCO players are only around for two years so by the time they have learned and are ready to make a contribution they are ready to graduate.
