so does it happen wireless or is something like plugged into the headphone jack (aux)?

It is a wireless communication between the Apple TV and the iPad via the feature they call AirPlay.

I've just watched the archived copy of this week's Charleston game randomly for about 20 minutes.

The picture quality varied from good to very good with no significant blurriness.

The freezing occurred fairly frequently and lasted from 5-10 seconds.

In any event, for me at least, the archive was watchable unlike the live transmission Wed night. A very significant difference. I wonder why.
