Why would any kid sign early? Does not seem to be in their best interest with coaching changes and how odd the ncaa is about letting some kids out of their letter and not let others.

Because coaches won't hold scholarships for them if they don't sign. Only the very top kids who are sure a school will hold a space for them have that luxury.
