I loved the banter yesterday when Barkley was talking getting "southern fried steaks" in Houston, and Kenny Smith told him to go to a really fine steakhouse, order their best steak, and tell them to chicken-fry it.

Serious question. Any idea why it's called chicken fried steak when it's not chicken?

It's because the breading/batter used is the same as what's used for fried chicken. Chicken fried steak is cube steak. You have to do a lot to make cube steak edible.

Chicken fried steak is fried like chicken but served with mash, gravy and corn. If good it's peppery. I love it!

That's about the only way cube steak is any good. It's a poor man's Wienerschnitzel (basically same thing, but veal instead of cube steak).

That's the only "steak" my parents could afford for our large family. A step up from boot leather.

We had it once a week when I was a kid. I got cramps in my jaw from eating it.

Correct, but these days it can be brined to tenderize and keep it moist. and sometimes it’s tastier than more expensive cuts. If the gravy they make is good that is a big key. This was Mickey Mantle’s favorite dish, I had it at his restaurant in Manhattan year ago,
