OT: What’s Your Specialty?

Very simple. Potatoes are cut up in small cubes, hard boiled eggs cut up small as well, celery, onion, salt & pepper. Most people use mayonnaise, but I prefer Miracle Whip. No mustard.
Or Kewpie Mayonnaise. My wife swears by it.
 
In our house, it’s called ‘green stuff’. Lime jello, cool whip, crushed pineapple and pecans.
Sounds interesting...maybe. I'd have to try it, but my Ambrosia is much different.

Five ingredients:
  • Small pineapple chunks (strained, no syrup)
  • Small mandarin organges (strained, no syrup)
  • Minature marshmallows (go easy with these)
  • Coconut flakes (go easy with this also)
  • Sour cream (generous amount)
Gently fold together until fully mixed, cover, and refrigerate overnight.

I usually make this for large family get-togerthes as well.
 
The few times we have gone to one - often when we are visiting family in Texas - the odd thing we "bring" is canned pork and beans. Because what always happens is everyone is enjoying potato salad and macaroni salad and, since I don't do mayo I don't have a side dish to eat. So we bring something "just in case".
 
Smoked ribs with BBQ dipping sauce for those who desire.

My wife makes a fantastic macaroni salad.

I bring the liquid libation - bourbon!!!!

And - We bring our appetites!!!
Now that all sounds delicious!

Potato salad…mash 5 hard boiled eggs, , add chopped celery and chopped onions ,add hellmans mayo, red wine vinegar, and 2 spoonfuls of country Dijon mustard . I mix this well and keep tasting until the flavor is just right. You may need to add a little more mustard or vinegar. Cut up boiled red potatoes, then add mixture to potatoes.







I’ll cook barbecue ribs using a great recipe from Mrs. Wilkes’s boarding house in Savannah, GA. I’ll also make potato salad.

Maybe its a regional difference, but none of these recipes contain sugar. Most people I know put sugar in their potato salad, and even some of the restaurants down here do as well. Another twist is adding bacon to the potato salad. There is a restaurant here that incorporates bits of bacon in its version and its very very good.
 
In the local paper they had a recipe for a bacon potato salad. Of course you remove and crumble up the bacon an mix it in, but it calls for you to add the onion and garlic to the warm bacon fat and mix it together. :eek:

For salad

  • 2 pounds baby gold potatoes, halved
  • Salt
  • 6 slices bacon
  • ½ red onion, diced small
  • 2 cloves garlic, peeled and finely minced
  • 3 green onions, diced
  • ¼ cup fresh parsley (regular or Italian flat-leaf), finely chopped
For dressing

  • ¼ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt and freshly ground pepper
