I'm guessing he'll tell you it's not in any restaurant in these parts.

Creative Cooking in Old Saybrook is probably the closest you're going to get. The etouffee is decent; nothing else there has warranted a second try.

I'd be interested if he or anyone else is aware of good Cajun food in CT.
