Wow, I hate humidity and filth, but I love soul, grit and live music and I can't get enough of New Orleans. Been there more than a dozen times and I'm headed there again next month, although I'll miss this game.
If you are limiting yourself to Bourbon Street you are missing the essence of the city. The live music is without question my favorite on the planet, and the food and people aren't far behind. I could never live there because of the humidity, but I can't go too long without going there, either, because the spirit of the place is so unique.
In terms of hotels, it's probably the best city to name your own price with Priceline, as there are only three districts with 4-star hotels (French Quarter, Central Business District, Warehouse/Riverfront), and any of them are fine and within walking distance of most stuff you will want to frequent. If you go below 4-stars the quality and conditions can diminish quickly, so make sure you read the reviews or get a personal recommendation. Fodor's is actually quite good and reliable too.
