Never realized that professors and scientists at UConn have a role in the creation of the ice cream.

I don ‘t know if it’s still the case, but in the 60s when i was a student UConn had a course in ice cream tasting. I was a Liberal Arts major with plenty of electives. Like an idiot I took a Business Law course instead of ice cream tasting. Opportunity wasted. Spent many an hour at the Dairy Bar on my way to my Towers dorm.

My daughter, who worked there when she was a student, claims that the dairy bar ice cream couldn’t be sold in supermarkets because the fat content exceeds some standard for commercial ice cream.

I haven’t heard anything that corroborates that but it tastes like it may be true.
