Learned about Nat’l Taco Day here on the BY, and improvised with stuff in my frig:
- Leftover rotisserie chicken breast
- Grated Tillamook extra-sharp cheddar
- Chopped fresh jalapeño
- Chopped fresh red bell pepper
- Chopped fresh onion
- Chopped fresh mango
- Sliced cherry tomatoes
- 8” Soft flour tortillas
Assemble/your-own bar, microwave 40 seconds, save the tomatoes and mango for topping after heated. OMG

Oh, shoot - I had a dental procedure Thursday and will be avoiding crunchy stuff at least until next Thursday when they remove the stitches. Even if I went with the soft taco (and I probably would) what is a Taco without accompanying chips?
