Why aren't the overall number one seed and defending national champions on CBS?

Because they figured the game would not be close, while the other game would be?
CBS is after ratings my friend. They would put on their own mother being butchered if it would get high ratings.

Ok, but our game Saturday is on TBS/TruTV too? I mean whatever, more lumber for the bonfire I guess but it does seem pretty weird to me that the reigning champs are relegated to cable/streaming (again).

Simple answer = money. The decision was based on eyes. Whatever would draw the biggest audience went on CBS.

I thought I read they rotate who gets some of the games per the contract, but that might just be final four/championship.

I think both games are on the same network for Saturday, there are no overlappoing games
