Buying meat

I bought half a cow. It was way too much cow. So much cow. I can’t believe how big a cow is. They look pretty big on the outside, but holy crap, there’s a lot more cow inside. If I never have another piece of cow to eat, I will be fine with it.

So, to answer your question, buy chicken.

I did co-op split a cow thing several years ago. I got x number of steaks, pot roasts, etc. Every cut was 1/2 thick. It was damn near impossible to cook rare. I even tried sous vide then a quick sear over a hot flame.

also grossed me out a bit that they wrote in a sharpie on every wrapped steak the name of the cow. "Thank you for helping us find Betsy a new home!"

That's messed up.

I eat several pounds of chicken a week. Air fryer is great for wings, thighs, etc. I'm still on a somewhat of a restricted CKD diet. I'm buying the beef in bulk just to save money. A couple tenderloins and a dozen ribeye will last me a year.

A one pound ribeye at BigY now cost $22+. At Arnold's Meats it's $10.99.

 
There is a good reason it is not in every grocery store. Deer farming is only legal in 5 states. Bear farming is not legal in any state. Even though I said I would like to bag a bear in CT. I am not sure it would be the best meat. CT bear eat a lot of trash, not ideal meat.
And if it tasted good, it’d be farmed more. I can get rabbit, duck, buffalo and ostrich at Big Y.

If the quality is the same and it’s graded choice then Arnold’s is a good deal.

I have very low standards. But the meat is actually really good. If I ate steaks more often, maybe I would notice a difference. But for me, Arnold's is just as good.
 
People buying a 1/4 or 1/2 a beef cow, how many have a quality generator or solar with battery storage?

When I did it many years ago I didn’t have one and there were a couple of dicey situations with outages but no catastrophes. I would want one.
 
Butcher near me is Darke Pines and they cut to what you want (1", 1 1/2", etc) of anything.

Now even from a butcher who got the whole cow or pig that morning, when I take my order home it gets an alcohol bath (typically rum, sometimes a little Titos) and that kills any bacteria that it might have - trick is great also for fish as that fishy smell is bacteria.

Anyway a little salt when taken out before cooking, and wow, my friends think I had a grandma from the Deep South.
 
I've been hoping CT would legalize bear hunting. Would love to give that a try.
I had bear pastrami once. Most vile thing I've ever consumed
