Disclaimer: Have to work, can't be at the game. (Don't worry, ticket was given to eldest son) Checked with tailgating crew:
Playing the Bulls, so it's BEEF:
Steak & egg sandwiches, burgers & accompanying sides.
In homage to the season (Apple harvest)- some kind of apple cake for dessert

One member of our tailgate crew REALLY likes fish: The Tampa area catch of the day is red snapper. So if one can find it: grilled snapper fillets.

Oh, and as always, BEER.
 
I think we're doing Cuban sandwiches. We play up the Cuban influence in FL, with Ybor City in Tampa coming to mind. Steak & egg sandwiches do sound good.
 
Ybor also has a cigar history so be sure to pack the stogies.

Not sure what we're doing yet but I'd bet that there will be some sort of beef in it.
 
The Jai Alai IPA from Tampa brewing is good if you can find it. I saw some in NY a few weeks ago.
 
Oops. Forgot the apps: gulf shrimp. We grilled some for the Navy game & the crew said that we should do it again. Got some 4" tiger shrimp (2 lbs.= 26-30 shrimp) for a good price. As of 2 weeks ago shrimp, oysters & clams were still pretty inexpensive. I will have to check with my source when I see him later this week.
 
Crab Cakes that we froze from the Navy game, w/ Lobster Tails and steak for the main course. Plenty of beer flowing as well.

Had some Florida Cracker Ale last weekend when I was down in Orlando. Was pretty decent.

Slightly off topic......Einstok White Ale from Iceland is friggin awesome. had it at the ESPN Club at the Boardwalk...then found it in a liquor store. Consumed a sixer before the game.
Can't find it up here yet though.
 
I'd be disappointed if no one had bacon jalapeno mac n cheese. Then again, maybe a USF tailgater will do that in homage to our great state

We are doing beef ribs for the main lunch course and (spiked) OJ in the morning.

For the between meal munchie, I am making Cuban Pinchos de Pollo with a Cuban Garlic dipping sauce. My buddy also gave me a recipe for Spanish style wings, but we may hold off until Houston for those.

Yeah, I got them at Big Y and we had so much food that game I kept them cold and froze them instead.

That's why you didn't eat them all...;)

I prepared my own crabcakes and remoulade the night before and cooked them at the game. They flew off the plate. I needed twice as many as I made, but real crab is expensive.
