Tailgate Menu for Fresno State...

Upon doing a little research, the Fresno area is famous for its tacos. I already know about Fresno chilies. So:
Big batch of chili
Corn bread
Jalapeno poppers
Some type of dessert (maybe brownies)
Beer & assorted libations
MAYBE ribs

I'm ignoring the location of this weeks opponent because I know what I want to serve as it's a business related tailgate.

First course, homemade crab dip with homemade pita chips.

Entree: lobster rolls, with chips and a tomato salad.

With beer and white wine.

If you can find a Seaver Vineyards wine, Tom was Fresno's most famous athlete. And you might want to consider a soundtrack of Warren Zevon, also from Fresno.

Yes, you can make alcohol from raisins. The essential sugars from the grapes are still there in raisins, although some of them are lost in dehydration.

To do it, boil the raisins with water for about 5-10 minutes to rehydrate and sterilize them. Use a blender to mix them up well, then use cheese cloth to filter out the pulp. You'll have to figure out you own raisin to water ratio. Best info I can find says about 2 pounds of raisins per 6 cups of water, but that's a guess, not a measurement. You probably want most of the water to be absorbed by the raisins, so go light and add more as needed.

Then add your yeast. A wine yeast such as Ruby Ferm will probably produce about 6-7% alcohol from them. It's unlikely you'll get more than that from any dehydrated fruit like raisins.

As a kid we would throw raisins in with cider and let it ferment. Kind of an old world concoction.

Sigh. Had to cancel the tailgate. I guess lobster rolls for dinner after I get home. Still figuring out if I want to try to get to the game, but cooking and eating outside in the rain is more difficult than just sitting through a game in rain.
