A couple of weeks ago, there was a good-sounding recipe on the WNBA site. They do occasional things on players' game-day routines, and this is something that Alana Beard eats before every home game. I've cooked it twice for the wife and kid, and it's really fantastic. On the one hand, I hate to post something from a former enemy, on the other hand, I'm sure triadduke fan, a foodie, will enjoy it. There were not many measures, and this is from memory.

Alana Beard's salmon and veggies

salmon fillet
sliced mushrooms
diced onion
cooked beets
avocado
an egg or two
diced feta
salt, pepper, and garlic to taste
olive oil

saute the onion in some olive oil till caramelized; add the mushroom and garlic if using and sweat the mushroom a little but not too much; it should be a little meaty

remove the veggies from the skillet, put a little more oil in, and increase the heat. Saute the salmon for a couple of minutes on each side till done as you like it

Fry the egg

Put the salmon and egg on a plate, spoon the cooked veggies over

Add a few beets, avocado, and sprinkle with feta.

For three people, I do a small onion, one avocado, 1/2 lb button mushrooms. One ~3-4 oz salmon fillet apiece. I serve it with rice pilaf, but then the kid doesn't like potatoes, so I don't think of them.
