I would also add the University of St Andrews, Scotlands first university, in the town of St Andrews on the east coast of Fife for a day trip. Its an easy and picturesque hr and 20 min train ride from Edinburgh. St. Andrews is a beautiful village to walk around and if at all interested in the royal family the university is where Prince William and Kate met. For hiking in the countryside, anywhere around Loch Loman is ideal. Wish we were going back but the bucket list is too long and old man time doesn't stop. :( Good luck with your trip.
