Great covers reimagine the song and do it successfully such that the performance stands on its own. The Earth, Wind and Fire cover of Got To Get You Into My Life above is a great example of that, as is this Amy Winehouse cover of All My Loving.

I didn't realize that the Grateful Dead had covered so many Beatles songs. See The Grateful Dead love The Beatles: Every Fab Four song covered by the Dead. In fact, per the article, Beatles music played a significant role in the creation of the Dead. One example of their covers (along with Dear Mr. Fantasy):

You all may hate me for this - but the Sgt. Pepper's movie thing. There were songs on the soundtrack / album that I liked better than the originals - not many, but a few. Haven't heard it in years, I admit. In the same way that as much as I love the Who's Tommy, Pinball Wizard by Elton John takes it up a notch.

This is not to rain on the Beatles - I have a complete set that was amazing to listen to, so many I didn't really know. But my taste in music has just a tiny pop twist added to some songs, I suspect.
