We get them at a market basket in RI for about $18-$24 per package (enough for 3 people). Cut them proper for the grain into chunks of about 1/2 to 3/4 inch. Marinade in 3 tablespoons of Memphis rub (make your own, it’s easy), add 1 tablespoon of oil, and 1 tablespoon of Worcestershire sauce. Sautee in butter on low heat for 4-5 minutes.
